Thanksgiving is only a week away, which means food, drinks, food, and more food. With the abundance of all this grub comes the highly anticipated leftovers (moist maker anyone?) Of course, there is the standard turkey soup, or the classic potato chip mashed potato sandwich...(wait, am I the only one who does that?) But this year, I wanted to come up with something that was easy, and that had different flavors from your traditional Thanksgiving dinner. With this in mind, I created this leftover turkey salad. It is super simple to make and is healthier than your average chicken salad. So if you are looking to use up a good amount of your turkey and want to pretend to be healthy for a millisecond around the holidays, this recipe is for you!
2 cups of diced leftover turkey
1 cup of Fage Total 0% Greek yogurt
1 TBS of Dill
1 Stalk of Celery
5.3 oz package of pomegranate seeds
salt and pepper to taste
(makes 8 fully loaded turkey salad sandwiches)
Add all ingredients in bowl
Put on top of your favorite bread, eat by the spoon full, or scoop up with some chips. The possibilities are endless ;)
